Easy Buffalo Chicken Dip

love Super Bowl Sunday. The food, the excitement, the game, the commercials, the halftime show, everything. For the past few years, I hosted a pretty epic party (I’m quoting friends here) making a spread that could easily feed 100 versus the 30 that came over. A huge pot of my Dad’s famous chili (a combo of sausage and ground beef, plus a killer spice blend gives it that extra kick) is typically the star mixed with a series of dips, cheeses, Hors D’oeuvres kept everyone full and satisfied. But the dish I always get the most questions about is my buffalo chicken dip.

To be honest, it’s not my dip. It’s a recipe I acquired from an ex-boyfriend and is one of the better things I kept in the breakup. I know there are dozens of variations of this dip, but I just love the creaminess and ratio of cheese to chicken to spice that you get in this version. I like to serve it with chips and celery to play off the idea of what you’d serve with buffalo wings.

And if you need a last minute dish to bring to a Super Bowl party, it’s so easy to make and really easy to collect all the ingredients. It’s what I’ll be bringing to my friends’ Super Bowl party this year (P.S. she writes the amazing blog Little Chef Big Appetite).
