Two crucial elements are necessary in the creation of the perfect lobster roll. The potato bun and the filling. At Pearl Oyster Bar in the West Village, they have mastered the art of both. The creamy, lobster interior with just the right amount of mayonnaise and huge chunks of lobster, surpasses that of any filling I have found elsewhere. The potato bun, steamed and lightly toasted, has just the right amount of crunch and sweetness to contain the decadent lobster. On the side, crisp shoestring fries create the necessary salty, counter-part to cut through the heavy roll. Add a bit of malt vinegar to the fries, prepare for a bit of a mess and you know you have the best Lobster Roll in Manhattan.
